Middle-Eastern Style Tofu Scramble

Ingredients

Main ingredients

  • 14–16 oz block firm tofu
  • 1 shallot
  • 1 garlic clove, smashed
  • Olive oil
  • 1 tsp salt

For the sauce

  • 1 tsp ground turmeric
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili or Aleppo powder, or chili flakes
  • 1/2 tsp salt
  • Freshly cracked black pepper
  • 1 generous tbsp tahini
  • 2 tbsp nutritional yeast
  • 1/3 cup oat milk

Optional additions and garnishes

  • Spinach or other greens
  • Fresh tomato
  • Avocado
  • Pomegranate
  • Fresh herbs
  • Seeds or nuts
  • Black garlic

Method

  1. Press the tofu for 10–15 minutes, then crumble it.
  2. Whisk together all sauce ingredients.
  3. Cook the shallot in a little olive oil over low heat, then add the garlic.
  4. Add the crumbled tofu with salt and cook for about 5 minutes.
  5. Pour in the sauce and cook for another 5 minutes.
  6. Add spinach or other greens just long enough to wilt.
  7. Finish with any garnishes you like.

Notes

Flexible and good for using whatever greens or toppings you have.
